Up to 50 million Americans may have difficulty digesting dairy products. Lactose, a milk sugar, is partly to blame since the enzyme lactase necessary to digest it is lacking in many adults. However, other constituents, namely beta-lactoglobulin from whey protein, are also difficult to digest. Beta-lactoglobulin occurs primarily in the whey fraction of milk and may not be broken down sufficiently by pepsin and pancreatin.
