Beta-carotene, the most abundant carotenoid in foods, is believed to be one of the most important carotenoids for human health. It occurs naturally in yellow, orange and red fruits and vegetables as well as leafy greens. Americans are believed to obtain less than half a serving of these types of foods each day, providing a mere 2 milligrams or less. Antioxidant protection typically requires a minimum of 6 mg (10,000 i.u.) and cellular protection and immune health are more likely to require 9-15 mg, or 15,000-25,000 i.u.
Research over the years has indicated that natural beta carotene, containing both trans and cis isomers, has antioxidant activity where as synthetic trans-only beta carotene does not.
Natural beta-carotene provides powerful support for quenching free radicals and protecting cells, tissues and DNA from oxidative stress. This antioxidant action is also key for the ability of this compound to encourage immune cell activity, including stimulating white blood cells and natural killer cells. This may prove especially important for immune health in the elderly, as natural killer cell activity declines with age. In one study at the Jean Mayer US Department of Agriculture Human Nutrition Research Center on Aging at Tufts University, Boston, MA, natural killer cell activity was significantly greater in elderly men supplemented with beta-carotene than in those taking placebo.
